  • Improve the system of traceability in Ukrainian food production

  • It means we need to :

    • know what kinds of parameters need to be monitored,
    • establish the limit of acceptability & unacceptability for these parameters, and
    • ensure that during monitoring, these limits are respected

  • Frequency of monitoring is important so that we can make necessary adjustments before the situation gets out of control

  • Physical and chemical testing is often preferred to microbiological testing

  • In some situations we may even use our eyes. The purpose of monitoring is to make sure that the control measure is done properly.
